Do you ever have leftover lasagna noodles in the box,
but not enough noodles to make an entire lasagna?
This recipe is for just that situation!
I found this "summer pasta" recipe in The Food Network
magazine - and it fits perfect with whatever summer veggies
are sitting in your refrigerator waiting to be eaten.
Summer Pasta
- Leftover Lasagna Noodles
- Fresh Chives
- Feta Cheese
- Olive Oil
- Butter
- Sausage (I used leftover bratwurst from the weekend!)
- Cherry Tomatoes
- Orange/Red Bell Peppers
- Lemon Juice
Cook lasagna noodles as directed on the box. In the meantime, butter a skillet and heat up sausage, cherry tomatoes, and bell peppers until desired (tomatoes should be blistered). When the noodles are done, drain and lightly drizzle olive oil. Top with the sausage and veggies - and sprinkle the feta cheese and freshly chopped chives on top. Lastly, drizzle a little amount of lemon juice on top. Delicious!
