Weekend 'Za

TGIF! Although it really doesn't feel like a Friday when
you have to go into work the next day... oh well because
it was homemade pizza night.  Although I'm not obsessed
with pizza, I definitely enjoy it multiple times in a month.

Tonight we made a classic 'za with pepper, red onion,
canadian bacon, mushrooms, scallions, fresh mozzarella,
fresh parmesan, tomatoes, and classic sauce.

The other pizza was a new mix on an old favorite:
BBQ chicken pizza, but with some additions:
sweet peppers, mushrooms & scallion mix.

Nothing makes a pizza more delightful than
fresh mozzarella cheese.  Good old Wisconsin cheese!

No Friday is complete without
a cocktail.  Today's mix: Berry Mojito!



Classico Pizza:
  • Canadian Bacon
  • Sliced peppers (red, yellow, orange, green)
  • Sliced fresh tomatoes
  • Sliced fresh mushrooms
  • Thinly sliced fresh mozzarella cheese
  • Shaved fresh parmesan cheese
  • Thinly chopped scallions mixed with italian seasonings
  • Pizza seasonings
  • Pizza sauce 
  • Pizza crust kit
Make pizza crust as directed on box/container.  Typically the crust will have to sit for at least 5 minutes.  I would suggest cooking the crust in the oven for about 5 minutes, otherwise your toppings will be too heavy and the crust will not be as crispy as desired.
After your crust is made, and spread onto a cookie/baking/pizza sheet, add toppings as you wish.
Cook at 450-degrees for about 15 minutes, or until crust is golden brown and cheese is melted.

Sweet Pepper BBQ Chicken:
  • Sliced sweet peppers (red, yellow, orange)
  • Crushed red pepper
  • Thinly sliced fresh mozzarella cheese
  • Shaved fresh parmesan cheese
  • BBQ sauce (I used Sweet Baby Ray's sweet & spicy)*
  • Sliced red onion
  • Thinly chopped scallions mixed with italian seasonings
  • Chicken breast sliced and chopped
  • Sliced bacon strips
  • Pizza crust kit
Make pizza crust as directed - the crust will have to sit 5 minutes.  Cook pizza crust for 5 minutes prior to adding toppings to avoid a soggy crust.
Arrange toppings as desired, saving the red pepper flakes, and cheeses for last.  Bake at 450-degrees for 15 minutes or until crust and cheese is golden brown.
*The type of BBQ sauce you pick will determine how spicy the pizza will be.
